I have worked at two restaurants that believed in remodeling magic: One is on the SF Waterfront and I know Bauer wouldn't write about them if they fell in the Bay. They spent millions 20 years ago to remodel and thought their business will increase many folds. A dinosaur waiter told me when they opened, business stayed the same. I cannot tell you any more. The second place, they consider remodeling as a magic act to erase all bad history of the restaurant and make a fresh start: How come the guests don't??? They remember. The stock market has a phrase called "take a bath." When a corporation knows a fiscal quarter will have negative numbers, it is customary to add more stuff that have to get done and let the losses increase knowing in the future, the numbers will go higher. It is a great publicity gimmick also.

Prognosticators predict an unusually large number of restaurants shutting their doors in the months to come, but some of the Bay Area's top restaurants remain optimistic. Otherwise how do you explain the unprecedented number of places that seem to be undergoing face lifts?

Despite the tight economy these restaurants are looking long range and reinvesting in their businesses.
